Zoe’s Strawberry Applesauce Recipe

I've shared the recipe I use to make Zoe's cinnamon applesauce, but we try to vary her diet. I don't want to eat the same exact food for lunch everyday (actually I typically do eat the same thing for lunch everyday); I might share about my favorite lunch another day. Anyway, I have the choice not to eat the same thing each day if I don't want to, and I want Zoe to have options and variance as well.

Eating a variety of foods not only has health benefits, but it also helps create flexibility in Zoe. If she ate the same food day in and day out, and one day, for whatever reason, we had to make a change, that could go badly. That being said, one of the ways I vary her diet is by adding different fruits to her applesauce. One of her favorites is strawberries. Here is the recipe that I created for her strawberry applesauce:

 2 lbs frozen strawberries (thawed)

46 oz premade unsweetened applesauce

3/4 c ground flax

1/2 c unsweetened shredded coconut

2/3 c toddler formula

2 T sugar

2 c baby oatmeal

First I thaw the frozen strawberries in the microwave.

Then I puree the strawberries in the food processor.

Next, I stir all the ingredients together in a bowl.

Once it's completely mixed together, I spoon the mixture into 8 oz canning jars, label the tops with a dry erase marker, and freeze them for her lunches. Divided this way, the recipe makes 8 jars at 242 calories and 7 grams of protein each serving.
